Although we have to say goodbye to some seasonal treats, there are still plenty of treasures we can incorporate into our meals. Autumn salad mixes are the perfect option for any meal – from lunch to dinner. They are a great way to diversify your diet, especially when you want to provide your body with more vegetables. Ideal Ingredients for Autumn Salads

Even though we say goodbye to the abundance of summer vegetables and fruits, autumn offers equally interesting flavors. We can create fresh, tasty dishes that will look perfect in your favorite glass bowl.

The key is to use the products available during this period. Broccoli, cauliflower, or Brussels sprouts will taste delicious, both cooked and raw. Additionally, fennel, green beans, or kohlrabi will add character to any salad. Autumn is also the time for pumpkins and still available fresh tomatoes, peppers, or zucchini.

And among the fruits? Pears, plums, but also cranberries and grapes reign supreme. They perfectly complement vegetables, adding full flavor to salads.

Pumpkin Salad – Quick Lunch at Work

A visually stunning pumpkin salad, served in a glass bowl, is a true feast for the palate. Its preparation is ridiculously simple. Just a few ingredients: pumpkin, grapes, arugula, fennel, blue cheese, and olive oil with lemon/lime juice. Remember to properly prepare the pumpkin by grilling it on a grill pan until golden brown.

When arranging the dish, place some arugula at the bottom of the glass bowl, add sliced grapes, fennel, pumpkin, and pieces of cheese. Mix the olive oil with lemon juice and drizzle the salad with this prepared "sauce." And it's ready!

Barley and Brussels Sprout Salad

Start by boiling water (or use ready-made broth if you have it on hand). Add Brussels sprouts to the boiling water, previously cleaned of outer leaves. Cut larger specimens into halves or quarters. Cook for about 7-8 minutes, then drain and rinse with cold water for about 1.5 minutes, then drain again. Pour hot broth over the peas in which the Brussels sprouts were cooked. Wait a moment for the peas to thaw, then drain them.

Transfer the cooked pearl barley to a glass bowl, add Brussels sprouts, green peas, and cheese cut into smaller pieces. Finely chop the chives, and tear the basil leaves into smaller pieces by hand. Mix everything thoroughly.

In a small bowl or jar, combine truffle oil with lime juice. Add a bit of honey and mustard and mix thoroughly. Season with salt and pepper to taste. Drizzle the previously prepared salad with this dressing!

Leek Salad – Perfect for a Sunday Family Dinner

When we think of classic dishes perfect for family gatherings, leek salad comes to mind. If you already have the ingredients ready, preparing this dish will take no more than a few minutes.

Start by boiling four eggs. Meanwhile, you can prepare the corn – although traditionally canned corn is used, it's worth using fresh in the autumn season. Cut the white part of the leek into pieces about 3 cm long, then cut them lengthwise and transfer to a glass salad bowl. Add pickled cucumbers cut into cubes (3-4 pieces depending on your preferences) and about 125 grams of canned peas. After boiling, cut the eggs into small cubes. Combine everything thoroughly, adding two tablespoons of mayonnaise. Finally, sprinkle with fresh, finely chopped dill. Enjoy!

Autumn Chicken Salad – A Proposal for a Dinner Dish

Who said salads have to be vegetarian? If you feel like having a salad with a bit of protein, this recipe is perfect.

Start by preparing a small chicken fillet with skin, frying it in a pan after lightly salting. When the skin turns golden, set the meat aside to cool. Add a mix of salads to a large glass bowl, enriching it with arugula and spinach. Chop a pear and a stalk of celery into small pieces. Also include walnuts and blue cheese, such as brie cheese. For the dressing, mix two teaspoons of honey, five tablespoons of balsamic vinegar, and 50 ml of good quality olive oil. Mix everything well, then drizzle the prepared salad mix. Now add the chicken cut into thick slices. And there you go – your chicken salad is ready to serve. Pro tip 😉 You can take such a salad to work the next day.
